Yes, its true, these couldn’t be tastier for the amount of effort. They are almost like tomato candy. Pungent with ripe, sweet flavor. I used to do these with olive oil but tried them with Ghee for the first time and I love them both ways. Try this with any type of tomato. This is the variety pack from our local organic store.
If the tomatoes are on the smaller side, like these, simply cut them in half. otherwise 1/4″ slices will do. Brush the cut side with melted Ghee (or olive oil) and sprinkle with sea salt. The salt will help the juices evaporate making the flavor stronger. If you don’t have a brush, just tilt your pan and make a little puddle of the Ghee to dip in.
- Bake them at a low 225 degrees for 2 to 3 hours. They will shrink in size but grow in taste.
