Carrot Ginger Pudding
Originally we named this for little Frieda so we would not have every meal she eats be called soup. Little ones are not the only ones who need a treat so I stand by the title. This is super easy and needs no exact measurments. You can make as much as you like.
Start with whole, organic, carrots, (don’t peel them).
Rough cut them so they will cook evenly.
Just a touch of raw honey while the mixture is cooled down enough.
Simmer carrots in just enough chicken stock to cover them and a half inch chunk of ginger (or however much you like). Puree with a spoonful of coconut oil and a smidgen of raw honey. Will thicken more when chilled. If you are past Stage One, add some delicious ghee.
