…then five minutes later, I ate this. Anybody who knows me will tell you that I can cook all day long. I love to cook, feed people and eat, three of my favorite things. Unfortunately, I can’t spend all of my days in the kitchen and a lot of times, even if I am in the middle of an all day cooking frenzy, I need
a quick meal. For this I heated a little pasture cream in a frying pan and added some spinach I picked up from the local co-op. I sprinkled in a generous amount of sheep feta and let that cook a minute while I scrambled one duck egg. As you will see, there is more spinach and cheese than egg, which made this a delightful little feast.
